Odd observation sparks a class experiment

One of the observations we do every year is place celery in water that has been treated with food color so that we can observe the xylemPop-up glossary definition. and how water is pulled up through this tissue to the top of the celery. This year we set up the experiment on a Thursday, but couldn't do our observations on Friday as planned, so the celery spent the weekend unobserved.

When I returned Monday and checked the celery I noticed something odd about the plants. When I asked my students to look at the plants, they also notice. Can you see in the picture below what we thought was a bit strange?
